Day 22 - September 5, 2011

Happy Labor Day!!  I started my day with a bowl of Fiber Plus Caramel Pecan Crunch cereal.  Pretty soon I'm going to be out of this cereal and I haven't decided if I'm going to repurchase it or buy one of the other ones.  Hmmm... I'll have to think about that.  For lunch I decided to make a little mini pizza.  I know what you're thinking, More Pizza?!?!  The only reason I decided to make a mini pizza is because there were leftover mushrooms and I didn't want those to go bad AND we have spinach, which doesn't last very long, so I wanted to use some of that too.  So I used a wheat tortilla, spread some Ragu sauce on it.  Then I cooked some spinach and mushrooms and put those on top of the sauce.  Then topped it with low fat mozzarella cheese.  My husband had a little accident in the oven last night when he flipped his party pizza and it landed upside down on the bottom of the oven.  So the oven was unusable when I made my pizza because we needed to figure out how to get all that mess out of the oven.  I used the broiler instead.  I just put it under the broiler until the cheese started to brown a little.  This mini pizza was definitely yummy.  The spinach and mushrooms were a perfect combination.  And this was a good way to easily eat a lot of spinach.  I put about 2 handfuls of spinach in the pan and after it cooked down it was the smallest amount.  I may just add spinach to any pizza we make or order from now on.  With my mini pizza I had a Light Yoplait White Chocolate Strawberry yogurt.  By the time dinner came around one of my husband's friends had stopped by and we were all hungry.  His friend had never been to Togo's so that's what we had for dinner again.  This time I could only eat half of my 6 inch Turkey Avocado sandwich.  I was so full after 1/2, I'm not sure if they added more meat this time or I was just full, but it was still really yummy.  I drank a raspberry iced tea with that and had 1/2 of a chocolate chunk cookie.  While my husband was at the neighbor's house one of his other friends stopped by and dropped off some Muddy Buddies.  At least that's what they are called in Oregon, where I'm from (Illinois) we called them Puppy Chow.  So whatever you call them from wherever you are, they are chex with peanut butter, chocolate and powdered sugar.  So good!  I've never made them because they look like a pain in the butt to make, but they are just soo yummy!  So I had a little bit of those too. Hee Hee =)
I weighed 236.8 this morning. that's down 1.8lbs from Saturday (since I forgot to weigh myself yesterday).  That's also down 4.6lbs. since I started 3 weeks ago!!  And that's down 11.2lbs since January!  WooHoo!  I think 4.6 lbs. in 3 weeks is good.  I think 1-2lbs a week is healthy, right?
